About this deal

I call oyster sauce “the queen of stir fry sauces”. Meat and veggie stir fries, fried rice, fried noodles…all of these are great places to use oyster sauce - and though you can use it as the only sauce, I like to use it in combination with soy sauce and fish sauce for a more complex flavour. This homemade vegan oyster sauce recipe looks, tastes, and smells like oyster sauce, but is completely free of shellfish. It's also gluten-free, has a soy-free option, and is made with a handful of simple ingredients. Most oyster sauce adds wheat starch making the condiment unsafe for people on a no gluten diet. But there are lots of brands out there making gluten free oyster sauce that’s safe for people who can’t consume gluten.

Strain the broth through a fine-mesh sieve or cheesecloth-lined strainer (I used a pour over coffee dripper) into a cup. You should get about 250ml oyster broth if you don’t spill any.It depends. Traditionally, oyster sauce only contained oysters, sugar, and salt, but today soy sauce is commonly added. Soy sauce is usually made with wheat and is not suitable for those with celiac disease unless it is explicitly labeled gluten-free. I'm certain that this is because the way LKK defines “oyster extract” is the same between their 2 product lines, but other brands define it differently. How concentrated and diluted is this oyster extract? We don't know. And what does "oysters" even mean in the case of Healthy Boy? We also don't know. Not to mention the cooking process and the quality of oysters...there are just too many unknowns. The early versions of oyster sauce were likely made purely from oysters and their juices. Over time, additional ingredients such as soy sauce, sugar, and seasonings like garlic and ginger were added to enhance the flavor. This helped to balance the brininess of the oysters and create a more complex and versatile sauce. minutes later, the broth should have reduced by half. Transfer the oysters to a food container. You can use them to make oyster omelette later.

The main ingredient of vegetarian oyster sauce is dried shiitake mushrooms, which cannot be substituted by fresh ones – because they have been smoked and dried, their taste is more potent and intense. To use dried shiitake mushrooms, soak them in plenty of hot water. The mushrooms will expand 3 to 4 times their original size once soaked. Dried shiitake mushrooms - these have a really concentrated umami flavor that's far stronger than fresh mushrooms. Either you ask politely and hope they can provide such information (and you can trust them) or, you forgo it entirely.

Most oyster sauce brands will label allergens and other products that may cause problems for some people. Worcestershire sauce, combined with soy sauce, also works well as an oyster sauce substitute. Though it has a tangier flavor, the mixture captures the umami essence and saltiness found in oyster sauce. Combine equal parts Worcestershire sauce and soy sauce to create an adequate substitute.
